Back in Sugarbush with my good friend Mr Joel Levy. After a fabulously easy journey up we were joined by Joel's brother Josh who made the eight hour drive down from Toronto ... or 'Tronno' ... as he would have it ... phonetically speaking.
We have had incredible weather, its been 50 degrees since we have been up here, which equates to sunbathing in between runs on the near empty slopes. Josh has been pushing us to ski every last cent of the $72 lift fee whilst Joel has just been attempting to get it down to at least $10 a run ... as for myself I have been falling between the two of them going longer than Joel but happy to give the afternoon's 'mashed potato' a miss.
Evenings have consisted of a combination of Switchback Ale, red wine, good conversation, a little bit of movie watching, a little bit of guitar playing (them not me) and a good deal of laughter.... and of course some good old wind breaking, belching and profanity.
From a culinary perspective we have kept it pretty low key. Tray baked Chicken, Rib eye steaks and last night a pretty good combo of Morroccan sweet potato salad, Italian sausages and a cous-cous salad.
For the cous-cous salad
Ingredients
1 small bulb fennel outer skin removed and then finely chopped
1 red pepper finely chopped
10 cherry tomatoes pips squeezed out, chopped into finely chopped
handful mint finely chopped
handful coriander finely chopped
juice of a lemon
ex virgin olive oil
cous cous
salt pepper
Method
put cous cous in a bowlk and barely cover with boiling water. Leave for 5-10 minutes then fluff with a fork.
Now mix in all the herbs with a fork. Make sure they are well distributed through the grains.
Put all the other vegetables in a bowl and dress with the lemon and olive oil and season genorously with salt and pepper.
Now mix the vegetables into the cous cous. Taste for seasoning again and adjust accordingly.
Either eat immediately or leave until ready.
After problems with Blackberry GPS and some marathon consideration of a multitude of maps, Josh has now returned to Canada .... but did he cross at Cornwall or take the 416? ... you had to be there.
