River cafe green beans with mustard


This is a very simple recipe but it makes a delicious side dish, particularly with a steak

Ingredients

500g/1lb green beans
3tbsp Dijon mustard 
2tbsp red wine vinegar 
120ml/4oz extra-virgin olive oil 
Sea-salt and freshly ground black pepper

Method


Mix the mustard with the vinegar and then slowly add the olive oil slowly in a thin stream mixing all the time. This sauce should have the consistency of mayonnaise. 
Season. 
Cook the beans in boiling, salted water. Drain and cool for a minute. Place in a bowl and season. Then pour over the dressing. Toss, making sure all the beans are coated. Serve.
